Magnificent & Easy
Pralines

1/2 c. butter Melt in
large microwavable bowl, usually 1 min. & butter container for later
2/3 c. brown sugar, packed
1 can Eagle Brand milk ( I prefer Low-Fat Eagle Brand)
Add to butter, stir mixture to remove lumps.
Microwave for 3 min., remove, stir thoroughly.
Microwave for 2 min, remove, stir thoroughly.
Microwave for 2 min, remove, stir thoroughly.
With last
microwave process, should see bubbling in mixture. (Older microwaves may need 1
additional min.)
Stir mixture
until it begins to thicken and cool. (I prepare ice water in sink to depth of
the mixture in the bowl, insert the bowl with mixture into the ice water,
stirring until the mixture becomes a bit stiff).
1 tsp. Vanilla
2 c. pecans
Press into a 9 x
13 ( I prefer smaller) size pan, buttered. When cool, cut into small squares
with very sharp knife.
Or
Pour mixture onto marble
surface or 2 large cookie sheets next to each other. Use 2 metal spoons the size
you choose for pralines to separate the mixture, molding into chosen shape.
Variations yield
good products with different textures and flavors, but have never had a poor
outcome.
Adding pecans first
gives a toasted pecan flavor.
Different types of brown
sugar, or vanilla yield nice variations.
Any sweetened condensed
milk, Low fat and Fat-free also work.
According to the
original recipe, stick margarine works as well.
Vegetable spray works for use
with the pan, but not for the cookie sheet method.
